philosophy, history, essay, narrative, illustrated album and feminisms.
This editorial line has influenced our cuisine and culinary research, inspiring us to offer organic food and locally produced, unusual ingredients and pre-Hispanic recipes reinterpreted with a contemporary taste.
Faced with gentrification and growing tourism we prefer to offer a tour of the flavors and history of our region, starting from the principle that organic food is a fundamental right, not a business, and we are concerned about the displacement of native populations and his historical taste.
